A Pollutri, paese dell'entroterra Vastese, la plurisecolare devozione per San Nicola (Patrono del Paese) è molto radicata e sentita. Sia a dicembre che a maggio vengono rinnovati i riti della tradizione, sia religiosi che popolari, che oltre a contemplare le celebrazioni cristiane vedono il loro momento clou nelle manifestazioni di piazza. In inverno, nella notte tra il 5 e il 6 di Dicembre nella piazza antistante la chiesa del Santissimo Salvatore, in numerose ed enormi caldaie (in dialetto callàre) alimentate da pire di legna viene fatta bollire una enorme quantità di fave. Ciò per ricordare il Santo che, come narra una antica leggenda, salvò il paese dalla carestia facendovi arrivare 6 barche colme di fave. Tra gli uomini ed i giovani dei vari gruppi di fuochisti si innesca una furibonda gara a chi riesce a far bollire prima l'acqua con la conseguente cottura dell'ortaggio che, una volta lessato a puntino, viene distribuito con pane e vino locale alla popolazione presente che viene così ristorata anche dai rigori del freddo. In primavera (quest'anno il 5 maggio) è la volta del pane, sotto forma di taralli, che ricorda la prodigalità del Santo che mai nulla fece mancare alla comunità. Prodotti per settimane nelle case dei volontari del Comitato Organizzatore delle Feste di San Nicola e poi raccolti in cesti votivi presso la Casa di San Nicola, vengono portati in processione con la banda e persino con gli Apecar 50 e poi distribuiti... o meglio "lanciati" sulla popolazione festante dai balconi del Palazzo Del Re. Anche qui si scatena la gara (che vede coinvolte tutte le fasce d'età) a chi ne raccoglie di più! Quest'anno sono stati prodotti circa 12.000 taralli di cui oltre 3.000 sono stati ...lanciati. Gli altri sono stati distribuiti nei giorni precedenti tra la popolazione del centro storico e delle contrade. La manifestazione si scioglie in un applauso generale.
