I noticed that, especially camellias, because of the uniform color of the petals (unlike, for example, rhododendrons and orchids), and also the shape of the petals in question, if the light is not the right one they are quite "flattened" and uninteresting.
I also seem to make them good when they are illuminated directly by the sun, unlike other flowers that I prefer to photograph them in the shade.
Then, contrary to my habit (which I don't like very loaded colors), camellias often increase saturation a bit with the "vividness" parameter of Camera Raw; because if they're not chromatically vibrant they don't make it.
