GLi arrosticini sono legati alla tradizione pastorale dell'Abruzzo e al conseguente consumo di carne ovina. Il loro luogo d'origine è da ricondurre alla fascia orientale del Gran Sasso d'Italia, per la precisione nella zona della Piana del Voltigno. Sono espressione culinaria della pastorizia stanziale e non della transumanza,come ritenuto in passato: leggenda narra che furono inventati negli anni 30 da due pastori del Voltigno che tagliarono carne di pecora vecchia difficilmente mangiabile in piccoli pezzi per non sprecare la carne, anche dalle zone vicine all'osso dell'animale, i piccoli pezzettini di carne sarebbero diventati spiedini utilizzando un bastoncino di vingh, una pianta che cresce spontanea lungo le rive del fiume Pescara, per poi cuocerli alla brace all'aperto. Vengono cotti alla brace , normalmente utilizzando un braciere dalla caratteristica forma allungata a canalina definito, in base al dialetto della zona , " fornacella", furnacella", " rustillire", o " la canala". Di solito vengono accompagnati con delle fette di pane casereccio cosparse di olio extravergine di oliva e gli si abbina egregiamente un Montepulciano d'Abruzzo.
