È la primavera, di solito da aprile a bassa quota fino a giugno in montagna, il periodo dell'anno in cui le spugnole (o morchelle) fanno la loro fugace comparsa: ricercate, prelibate, c'è chi giurerebbe ancora più gustose dei funghi porcini. Io sono fra questi ultimi fautori. Con il termine comune “spugnola” si indicano i funghi del genere Morchella, circa 15 specie dalla buona commestibilità. Poiché contengono l'acido elvellico è strettamente necessario bollirle o essiccarle prima di consumarle a tavola per distruggere la tossina velenosa. L'aspetto della spugnola è inconfondibile: il gambo è chiaro e liscio ed il cappello (o mitra) ha una forma conica dal colore giallognolo/brunastro con rientranze ed alveoli che ricordano una spugna o il favo di un alveare. La spugnola cresce isolata o in colonie nei prati e nei i boschi di latifoglie, quali pioppo, frassino e olmo, e lungo le golene, quegli spazi piani compresi tra la riva di un corso d'acqua ed il suo argine. Predilige terreni freschi, sabbiosi e riparati dal vento. Ad occhi inesperti le Morchelle potrebbero essere confuse con la Gyromitra esculenta (falsa spugnola), specie molto pericolosa soprattutto se consumata cruda. In questi casi, per evitare ogni rischio di avvelenamento, è bene far riconoscere il raccolto agli Ispettorati Micologici della ASL più vicina, che in modo totalmente gratuito vi daranno la conferma o meno della commestibilità. Nella fattispecie il raccolto è stato effettuato lungo gli argini dell'Adige in terreno sabbioso.
