#Viola Crocus thomasii Ten. Fam.: Iridaceae Nome italiano: Zafferano di Thomas E' una piccola pianta erbacea, perenne, bulbosa. Il fiore è formato da un perigonio a fauce giallo-aranciata e lacinie quasi uguali tra loro. Fiorisce da ottobre a dicembre. La piantina è comune nei luoghi e prati aridi e sassosi. Il nome del genere deriva dalla parola greca "Krocos" che significa "filo di stoffa" e si riferisce agli stimmi del fiore. Lo Zafferano di Thomas in passato è stato utilizzato in sostituzione dello zafferano coltivato (Crocus sativus). Ancora oggi viene utilizzato nel leccese per colorare la famosa scapece di Gallipoli e per fare liquori e risotti.
