La Sacca degli Scardovari è un grande "orto marino" per la coltivazione delle cozze, ostriche e delle vongole. La qualità della produzione dei mitili è ottima, tanto che la cozza di Scardovari unica in Europa si fregia della Dop. I trespoli, le strutture in legno di castano per l'allevamento delle cozze sono ben visibili. Sommerse dalle acque salmastre e basse della sacca le cozze vengono appese ai trespoli in apposite reti, grandi poco più di un'unghia in dieci mesi sono pronte per l'impianto di stabulazione dove vengono depurate prima di essere commercializzate. Ancora maggiore è la produzione di vongole veraci che vengono "seminate" sui fondali sabbiosi e successivamente raccolte con appositi rastrelli, per non danneggiare i fondali.
