La prima pietra del'edificio fu posta il 13 febbraio 1500, alla presenza del Marchese Ludovico II e della moglie Margherita di Foix. Nell'annesso convento si stabilirono gli agostiniani, che si sarebbero presi cura dell'edificio di culto. Dalla veduta di Saluzzo annessa al "Theatrum Sabaudiae" del 1682 si evince che l'ampia chiesa a tre navate aveva in origine un campanile che superava poco più d'un piano il tetto del tempio e come essa fosse fornita di altari laterali e affrescature in facciata. Nel corso dei secoli l'edificio subì rimaneggiamenti e distruzioni che ne alterarono l'aspetto originario. Durante la guerra di successione austriaca (1740-1748), il re Carlo Emanuele III di Savoia convertì la chiesa e il convento di S. Agostino in ospedale militare. Gli agostiniani fecero ritorno dopo la pace di Aquisgrana, conclusa nel 1748. La chiesa ospitò nuovamente l'ospedale nel 1794; dopo la soppressione degli ordini religiosi nel 1798 fu tenuta aperta ancora per un breve periodo di tempo, finché nel 1802 venne chiusa definitivamente e venduta all'asta, con il convento ed i beni annessi. La parete lungo la strada venne suddivisa in camere date in affitto, la navate centrale e la parte confinante con il convento furono trasformate in fabbrica di salnitro e successivamente in stalla e fienile. Il campanile fu demolito fino alla colta della chiesa e coperto con tegole. Il convento fu convertito in piccoli alloggi ed il cortile del chiostro fu diviso in orti. Dal 1879 al 1885 il vescovo Buglioni di Monale acquistò i fabbricati ed il terreno contiguo per riportare il culto nella chiesa. Dell'antico edificio non restava quasi più nulla e dunque il vescovo incaricò l'ingegnere Melchiorre Pulciano di ricostruire della chiesa e dell'annesso campanile, edificate secondo le forme attuali. Venne chiuso il piazzale antistante con una cancellata in ferro e sulla sommità della facciata venne posta la croce in ferro, tolta nel 1848 dalla guglia della Torre Civica. La chiesa fu riaperta al culto il 28 agosto 1882 e 10 anni dopo divenne sede parrocchiale. Doppia esposizione.
