È una pianta biennale, nel primo anno produce una rosetta di foglie basali, picciolate, coriacee, pennatifide, lunghe fino a 40 cm, con margine ondulato e sinuato, con lobi triangolari terminati da spine robuste e lamina verde scuro con variegature bianche lungo la nervatura, glabra. In questa forma la pianta trascorre l'inverno. Nel secondo anno, soprattutto dopo abbondanti piogge invernali, compare il fusto aereo, eretto, robusto, scanalato, rugoso, alto fino a 1,5 m, ramificato nella parte superiore e con foglie larghe, sessili, glabre, dentate, terminanti con spine gialle. L'altezza della pianta unitamente alla larghezza delle foglie e alla densità delle piante ne fanno una formazione pressoché impenetrabile in certe zone della Galilea settentrionale dove si rinviene comunemente. Il nome comune, cardo mariano, fa riferimento alle macchie color latte che sono sparse nelle foglie della pianta e che una tradizione vuole che siano le gocce di latte cadute mentre la Madonna allattava il bambino (Cattabiani, 1996).
