Le zeppole di San Giuseppe derivano da un'antica tradizione risalente addirittura all'epoca romana. Ci sono due leggende che si tramandano da secoli. La prima risale alla tradizione romana che narra di una fuga in Egitto di Giuseppe, Maria e il piccolo Gesù. Dove San Giuseppe dovette mettersi a vendere frittelle per strada per poter mantenere la famiglia in terra straniera. Per questo motivo, in Italia, le zeppole divennero il dolce tipico della festa del papà, in onore anche a Giuseppe e per celebrare la figura del papà e tutto ciò che sono disposti a fare per la propria famiglia. La seconda leggenda è legata alla “Liberalia”, celebrazioni che avvenivano nell'antica Roma per onorare le divinità di Bacco e Sileno. Durante queste celebrazioni abbondanti fiumi di vino intrattenevano gli ospiti e per accompagnare tutto quel vino e per ringraziare il dio del grano, venivano fritte delle frittelle di frumento. Le zeppole di San Giuseppe come dolce tipico napoletano Tutti sanno che le zeppole di san Giuseppe sono un dolce tipico napoletano e si racconta che in questo giorno per le strade di Napoli i friggitori si esibivano pubblicamente davanti alle proprie botteghe in questa che per loro era un'arte “il friggere”. Goethe, in visita nel capoluogo partenopeo verso la fine del 1700, ce lo racconta: "Oggi era anche la festa di S. Giuseppe, patrono di tutti i frittaroli cioè venditori di pasta fritta…Sulle soglie delle case, grandi padelle erano poste sui focolari improvvisati. Un garzone lavorava la pasta, un altro la manipolava e ne faceva ciambelle che gettava nell'olio bollente, un terzo, vicino alla padella, ritraeva con un piccolo spiedo, le ciambelle che man mano erano cotte e, con un altro spiedo, le passava a un quarto garzone che le offriva ai passanti… ”. Come la maggior parte dei dolci napoletani anche le zeppole si dice che abbiano un origine conventuale, forse nel Convento di San Gregorio Armeno, ma c'è chi attribuisce “invenzione” di questo dolce alle monache della Croce di Lucca o quelle dello Splendore, suore che erano solite sperimentare un nuovo dolce per ogni festività. La ricetta originale delle zeppole di San Giuseppe Se ne sono sentite tante in giro sulla nascita delle zeppole di San Giuseppe ma la prima ricetta vera e propria risale al 1837 quando il celebre gastronomo Ippolito Cavalcanti, Duca di Buonvicino, la mise su carta e la inserì nel suo trattato di cucina. Le zeppole, come molti dolci della tradizione napoletana, ha una pasta bignè quasi leggermente salata che una volta cotta vine riempita e decorata con una crema pasticcera e viene messa come decorazione finale un'amarena o una fragola sulla punta.
