Per chi, tra voi, volesse cimentarsi con la mia ricetta, ve la ripropongo di seguito:
Trofie fresche con fiori di zucca, ricotta e pomodorini
La mia ricetta per 4 persone:
Mettere a bollire l'acqua per la pasta (320 gr. di trofie o altra pasta fresca) in una pentola, con un pugno di sale e, nel frattempo, mettere ad imbiondire a fuoco lento uno spicchio d'aglio in una padella larga con 6-8 cucchiaiate di olio e.v.o., togliere l'aglio appena imbiondito, aggiungere 40 fiori di zucca (10 per persona) mondati e tagliuzzati grossolanamente e 4 pomodorini tagliati a metà e lasciar stufare per qualche minuto a fuoco lento coprendo con un coperchio. Nel frattempo calare la pasta (circa 6-8 minuti di cottura). A metà cottura prelevare un paio di cucchiaiate d'acqua di cottura e stemperare in una ciotola circa 120/150 gr. di ricotta vaccina (o di pecora o di bufala se preferite) e tenerla da parte. Scolare la pasta bene al dente (tenendo da parte un po'di acqua di cottura) e versarla nella padella con i fiori di zucca stufati e aggiungere la ricotta stemperata. Far saltare il tutto in padella a fuoco medio per circa un minuto. Se la pasta dovesse sembrare troppo asciutta, aggiungere un po' dell'acqua di cottura della pasta che avrete tenuto da parte, fino a raggiungere la consistenza desiderata. Spegnere il fuoco e, se lo si gradisce, aggiungere qualche foglia di basilico fesco, rimestare ancora e servire nei piatti.
