Nelle montagne più alte è già caduta la neve, il sole è quasi tramontato e l'aria è fredda quando Franzischeddu si ferma vicino a un ruscello, lega l'asinello e scarica le povere masserizie per farlo riposare, mentre il suo cane tiene a bada il piccolo gregge, si concede una piccola sosta per rifocillarsi, ha camminato tutto il giorno e non ha mangiato niente, bisogna fare in fretta prima che nevichi e stare attenti perché i ladri di bestiame sono sempre in agguato. Franzischeddu è partito da due giorni per la transumanza, è la prima volta che parte da solo, lui prima accompagnava il padre che ormai vecchio non ce la fa più ad attraversare montagne e colline per svernare in pianura, apre sa taschedda e ne toglie fuori un pezzo di lardo per il suo cane, per lui un pezzo di formaggio e due piccoli fogli di pane carasau che immerge per un istante nel ruscello per ammorbidirlo, questo è il suo pranzo e la sua cena, intanto la notte cala sul piccolo gregge e il vento freddo del maestrale avvolge tutto, Franzischeddu non dormirà bisogna vegliare, la famiglia conta su di lui e i banditi sono sempre in agguato, la vita è dura nelle montagne del nuorese. ------------------------------------------ Su pane carasau è un tipo di pane molto sottile e croccante originario della Sardegna, in particolare della provincia di Nuoro, la zona più interna e montuosa della regione. Il nome carasau deriva dal verbo carasare, che nel dialetto sardo significa tostare. Secondo gli archeologi, il pane carasau era mangiato sull'isola già prima del 1000 a.C., durante l'età del bronzo, così come testimoniano resti di forni e attrezzi nei nuraghi. Testimonianze più recenti, invece, vedono il pane carasau un simbolo della cultura pastorizia tipica della Sardegna. I pastori, infatti, durante i lunghi periodi di transumanza, avevano bisogno di portare con sè del pane che si conservasse a lungo e su pane carasau era perfetto per questo scopo potendosi mantenere anche fino ad un anno, se mantenuto asciutto. Al momento di consumarlo i pastori non dovevano far altro che bagnarlo un po', con acqua, vino od olio, per fargli riprendere la sua originale croccantezza, abitudine mantenuta tutt'oggi. Secondo il disciplinare il pane carasau deve essere ottenuto con soli 4 ingredienti: semola di grano duro rimacinata e proveniente esclusivamente dalle coltivazioni in Sardegna, acqua, sale marino sardo e lievito naturale (non è ammesso lievito chimico). Le fasi di produzione sono 4, racchiuse in un ciclo che viene detto Sa cotta (o Sa hotta). 1. S'inthurta: è la fase in cui gli ingredienti vengono impastati, il lievito sciolto in acqua e poi mescolato alla farina setacciata dentro un contenitore di legno o di terracotta, quindi lavorato energicamente e molto a lungo; 2. Pesare: è la fase della lievitazione, la prima dura circa mezz'ora, poi l'impasto viene suddiviso in tanti panetti che vengono stesi a formare dei dischi circolari, coperti da un telo e lasciati a lievitare per altre 2 ore; 3. Kokere: la cottura in forno, ad una temperatura altissima di circa 500°C, durante la quale i dischi subito si gonfiano e vengono divisi in due sfoglie; 4.
