Allora, partiamo dai contrasti.

Così ho eliminato le piccole imperfezioni con la toppa, fluidificato dove ho ritenuto opportuno intervenire, dopodiché ho usato il pennello con la tinta della pelle della modella dove la trovavo più consona e, zoommando al 200% ho levato il grosso delle parti rosse.
Infine ho dato una leggera sfocatura sempre sulla modella per renderla più gradevole (dal mio punto di vista eh! )
Ed ecco perché risulta poco contrastata, perché il soggetto principale della foto, come hai fatto ben notare tu, non lo è, e non potevo fare diversamente, altrimenti tutte le ombre che c'erano, sia sul volto, che sulle altre parti del corpo, avrebbero lasciato un effetto poco gradevole (tipo panda) 
Per quanto riguarda il discorso composizione (+ acqua - sassi) hai ragione, sarebbe stato meglio, ma onestamente era davvero difficile muoversi tra un masso e l'altro senza cadere in acqua per trovare il giusto PDR, e mi sono dovuto accontentare un po' degli appigli di fortuna che trovavo per cercare di comporre al meglio della situazione.
Per di più ero già appagato perché lo scatto che volevo portare a casa l'avevo già fatto (nome foto Guardami in questa stessa galleria).

L'ottomillesimo è stato un errore, confesso  non è questione di "tutti i costi", tanto è vero che è l'unica a questa velocità.

Per quanto riguarda gli ISO, io ho avuto una 550d come prima Canon (praticamente uguale alla tua 500d) e forse su quella si, 800 erano esagerati, ma sulla 70d non comportano grossi problemi (vedi del rumore evidente?) parlando di aps-C.
Se invece ci chiediamo se sono tanti 800 ISO per questo tipo di foto la risposta è sì.
Ho scattato quasi tutte le foto in questo posto a 400, e mai scelta fu più azzeccata, perché facendo un paio di scatti a ISO 100 mi risultavano delle ombre troppo marcate, dure, difficilmente correggibili anche in PP, mentre così si sono ammorbidite parecchio e sono diventate "sopportabili".
Ti dirò di più, con me c'era anche un altro ragazzo con la 6D, e si è accorto pure lui che le ombre che creava la 70d erano un pelino più chiare che non quelle della 6D.
Quindi, rispondendo al tuo post scrittum, avrei alzato lo stesso gli ISO, non a 800 ma a 400, chiudendo magari il diaframma a f 8 o superiore.
Poi Matteo, questo è quello che avrei fatto io tornando indietro, il mondo è bello perché è vario

Per gli ISO ho notato anche io lo stesso comportamento solo che uso molto spesso 200 ISO invece dei 400.

Credo che le fondamenta di un forum siano radicate sullo scambiarsi idee, opinioni e consigli, al fine di migliorarsi confrontandosi con gli altri, ed il fine ultimo nel postare una foto (oltre che per riscuotere il gradimento e consenso degli altri) sia proprio quello di metterci in comunicazione l'un con l'altro
Si, potevo mettermi su quella roccia dietro di lei, molte le ho scattate da li, e sicuramente sarebbe stato più produttivo per questa foto, avrei ripreso il torrente a valle (non a monte) e quindi incluso più acqua (ne ho postata una così tanto per renderti l'idea).
Ma sai, un po' ero appena tornato da li (e per arrivarci dovevo andare verso monte per prendere un ponte che attraversa il torrente e tornare indietro fino a quella roccia), un po' eravamo in 4 e la location non era propriamente comoda per 4 persone (due eravamo io e l'altro e due le modelle) visto che ci impallavamo a vicenda e un po' onestamente non me l'aspettavo si mettesse in costume  (sarò un pollo eh?! ).
PS è da poco (1 mesetto) che lo uso anche io, ma d'altronde per ritrattistica e moda è quasi d'obbligo.
