La lavorazione dello stoccafisso e' uno degli elementi che caratterizza maggiormente le isole Lofoten. A febbraio vengono pescate tonnellate di merluzzi, che vengono decapitati e messi a seccare per alcuni mesi. Naturalmente le teste rappresentano la parte mono pregiata del prodotto, ma i norvegesi sfruttano veramente tutte le parti di questi preziosi merluzzi. Per la cronaca l'Italia rappresenta il maggior importatore di Stoccafisso norvegese.
