“…Qualcuno diceva di vederci l'ombra del diavolo! Se ne sentiva il delirante sospiro, lo scalpiccio degli zoccoli e quell'odore di becco infoiato…” Mentre la Ghitina si faceva il segno di croce, il vecchio Josè, sghignazzando sotto ai baffi fissava gli occhi sgranati dei bambini. Poi levatosi lentamente dalla panca, sfruttando il momento di apparente paralisi indotto negli irrequieti animi fanciulleschi, procedeva lesto ad estrarre i profumati e fragranti pani dal forno. E neanche quel irresistibile profumo distraeva i ragazzi dai tormentati pensieri che frullavano loro nella testa. Solo dopo la scottante manovra, quando Josè procedeva ad infornare le tanto attese torte di mela e quelle di barbabietola rossa e cumino, il vecchio fornaio rompeva l'incantesimo: “E' dell'inverno, cari ragazzi, che bisogna avere paura e non dei camosci! Se quando salite ai pascoli alti, avrete il buon senso di portare con voi una manciata di sale…” ecco che i bambini, pendendo dalle labbra del buon Josè, riprendevano a respirare “…quel diavolo che tanto spaventa la Margherita, vi verrà a leccare le mani come un agnellino! Chiedetelo un po' al Battista che da anni con un pugno di sale mena le sue ottanta capre tra le rocce di Chaplet! Ma l'inverno… quello, nemmeno il lupo se lo mangia!” Eccola la ricetta del buon Josè per esorcizzare paure a cattivi pensieri: una manciata di sale, per ammansire il fuoco che scorre nelle vene dei camosci, unita al profumo del pane e delle torte di mela per alleviare, almeno per un momento, tutte le pene; anche quelle dell'inverno.
