Antica ricetta di mamma Pasqualina: Sbucciare le melanzane, tagliarle a fettine sottili, metterle sotto sale per 3-4 ore, spremere l'acqua e togliere i semi, sbollentare le melanzane con 50% di aceto bianco e 50% vino bianco per 5 minuti, scolarle, farle raffreddare distese su un panno o tovaglia, appena raffreddate mettere sotto pressa per togliere l'aceto ed il vino che hanno assorbito, condirle con aglio, sedano, peperoncino, olio d'oliva. A questo punto ci sono due possibilità: 1) servirle a tavola 2) metterle in vasetti per conservarle sott'olio (riempire il vasetto di olio d'oliva mano a mano che si riempie di melanzane).
