La prima volta che compare la parola pizza è nel 997, in un contratto di locazione di un mulino sul fiume Garigliano. Il documento, conservato nell'archivio del duomo di Gaeta, afferma che, oltre all'affitto, ogni anno erano dovute ai proprietari nel giorno di Natale «duodecim pizze», assieme ad altri beni alimentari. E dodici pizze erano la regalia prevista pure per Pasqua. Non sappiamo cosa quelle pizze fossero, probabilmente delle focacce. Ci è più chiaro, invece, in cosa consistesse la pizza napoletana descritta dal Bartolomeo Scappi, cuoco personale di papa Pio V, nella sua Opera, pubblicata nel 1570. Si tratta più che altro di un dolce. Bisognava pestare in un mortaio mandorle, pinoli, datteri e fichi freschi, uva passa, unendo acqua di rose in modo da ottenere una pasta che potesse essere mescolata con rossi d'uovo, zucchero, cannella e mosto d'uva. Il tutto andava poi tirato in una sfoglia da infornare alta circa tre centimetri. Scappi tuttavia è il primo a legare la pizza a Napoli e questa preparazione, per quanto complicata, è pur sempre una base su cui mettere sopra qualcos'altro. «In essa pizza si può mettere d'ogni sorte condite», precisa il cuoco papale. A Napoli, invece, dovrà passare qualche secolo, ma la base si trasformerà in una semplice pasta di farina e lievito. Con l'aggiunta del pomodoro arrivato dall'America, il gioco è fatto: ecco la nostra pizza. E quando Raffaele Esposito battezza quella con mozzarella, pomodoro, basilico e parmigiano, il cerchio si chiude. La regina delle pizze è la pizza della regina: la margherita si chiama così in onore di Margherita di Savoia. Ma esisteva già e non è stata inventata per la delizia dell'augusto palato, come in genere si racconta. Il colpo di genio di Raffaele Esposito, ovvero il pizzaiolo accreditato dell'invenzione, non sarebbe stato quello di aver creato dal nulla una pizza nuova, ma di aver risposto «margherita» ? ovvero lo stesso nome della regina ? alla domanda su come si chiamasse quella i cui tre colori (verde del basilico, bianco della mozzarella, rosso del pomodoro) richiamavano la bandiera italiana. La leggenda narra che il suddetto Raffaele Esposito, cuoco della pizzeria Pietro… e Basta Così (fondata nel 1780, ancor oggi esistente con il nome di pizzeria Brandi) nel giugno del 1889 fosse stato chiamato da un funzionario della real casa nella reggia di Capodimonte, dove si trovavano in vista il re d'Italia, Umberto I, e sua moglie, Margherita di Savoia. Il buon Esposito prepara tre pizze diverse e la regina dichiara di apprezzarne in particolar modo una, cioè quella che sarebbe diventata la margherita. A incoronare Raffaele Esposito re dei pizzaioli ci sarebbe poi una lettera, datata 11 giugno 1889, firmata da certo Camillo Galli, capo dei servizi di tavola della real casa: «Le confermo che le tre qualità di pizze da Lei confezionate per Sua Maestà la Regina vennero trovate buonissime.» La lettera è esposta alle pareti della pizzeria Brandi, di Salita Sant'Anna di Palazzo. Da quel 1889, tutte le volte che la regina Margherita tornava a Napoli avrebbe sempre invitato a palazzo Esposito che pigliava gli attrezzi del mestiere e si avviava assieme alla moglie con un biroccino verso la reggia dove preparava la pizza tanto apprezzata dalla sovrana. Ma la pizza con mozzarella e pomodoro esisteva già Nel libro di Francesco De Bourcard, Usi e costumi di Napoli e contorni descritti e dipinti, pubblicato nel 1858, quando la città sarebbe stata ancora per due anni la capitale del regno delle Due Sicilie, è descritta una pizza con la mozzarella e il basilico: «Altre [pizze] sono coperte di formaggio grattugiato e condite collo strutto, e vi si pone sopra qualche foglia di basilico. Si aggiungono delle sottili fette di mozzarella.» Il pomodoro viene dato come opzionale: «talora si fa uso», scrive l'autore napoletano di origine svizzera. Il bravo Raffaele Esposito, quindi, si sarebbe limitato a preparare per la regina tre pizze già diffuse in città e il suo merito sarebbe quello di averne battezzata una con il nome dell'augusta sovrana.
