Tra le numerose opere d'arte custodite nella chiesa di San-Gervais – San-Protais, merita di essere visitata la collezione di vetrate. Le enormi vetrate di questo edificio tardo gotico hanno visto il passaggio di molti maestri vetrai dall'inizio del XVI secolo fino ai giorni nostri. La chiesa di Saint-Gervais è una delle rare chiese parigine ad aver conservato un gran numero di vetrate del XVI e XVII secolo. Le più interessanti sono quelle della Cappella della Vergine (1517) e quella della Cappella di Saint-Jean-Baptiste che rappresenta il Giudizio di Salomone, tutte della bottega di Jean Chastellain. Il XVII secolo prediligeva il vetro bianco, a volte con elementi figurativi, come le vetrate della cappella del Battistero contemporanee alla facciata della chiesa costruita nel 1620. Diverse vetrate risalgono al XIX secolo, come quelle delle finestre alte dell'abside. Su iniziativa delle Fraternità Monastiche di Gerusalemme, a cui la chiesa venne affidata dal 1975, e in collaborazione con la Città di Parigi e i Monumenti Storici, sono state sistemate nuove vetrate: prima il ciclo delle cinque finestre della abside sud-ovest, prodotto tra il 1990 e il 1993 da Sylvie Gaudin; poi, diverse alte campate della navata sud, del transetto e del coro, affidate a Claude Courageux. Le sue opere sono riconoscibili grazie al loro colore e al loro stile, sia astratto che figurativo. Gli ultimi sono ancora in attesa della loro attuazione.
