Bella l'idea e invitante.
Non me ne intendo molto ma leggendo e prendendo spunti dal libro Food del National Geographic, avrei usato come luce una fonte laterale destra o sinistra con dei riflettori dalla parte opposta per schiarire (oppure ancora meglio da ore 11 o ore 1 quindi dietro e diagonale rispetto al piatto) per gestire meglio ombre e luci nelle parti lucide.
Nella foto sembrerebbe provenire dal lato basso destra rispetto al piatto.
Altra cosa che avrei usato è magari diaframma un poco più chiuso magari 1-2 valori anche se in genere per questo tipo di foto usano focali maggiori rispetto al 35mm.
Ultima cosa che mi viene in mente è il modo di presentare il piatto, nel senso che la fame viene comunque guardandolo credimi.... però se la pasta fosse presentata più raccolta tipo usando un coppapasta, probabilmente si creerebbe una sorta di texture più ordinata per l'occhio di chi vede la foto.
