I bistrot parigini mi hanno sempre affascinato, perché si respira un'atmosfera particolare che nessun bar, caffé o ristorante, può uguagliarne il fascino, almeno per la sottoscritta. Ecco da alcune informazioni trovate sul "Gambero", l'origine del nome "Bistrot". L'origine del nome “Bistrot” che, ci ricorda una Parigi, romantica e bohemienne, è alquanto contrastata, pare che la più accreditata sia quella che lo fa risalire all'occupazione russa di Parigi agli inizi dell'800, quando i soldati invasori, si rifugiavano nei piccoli locali e consumavano alcolici, urlando ai camerieri: “bystro”, (veloce) sollecitandoli a fare in fretta per non essere scoperti dai loro superiori. Altri, invece sostengono che i soldati russi erano costretti a sollecitare gli osti in quanto questi ultimi, che non li vedevano ovviamente di buon occhio, gli servivano da bere in maniera svogliata, molto lentamente. Leggende metropolitane a parte, il termine bistrot è comunque indissolubilmente legato alla cultura parigina ed ai suoi costumi e tradizioni: un luogo del bere, del degustare, che durante gli anni venne ad acquisire molti significati diversi, e che da posto di ristoro della gola divenne anche luogo di incontro di artisti, letterati, attori, palcoscenico di giochi e spettacoli, ed anche di riunioni politiche: nel bistrot insomma convergevano tutta una serie di personaggi, che in quegli ambienti piccoli, raccolti e fumosi, spesso maturavano l'ispirazione per le loro opere o le loro azioni rivoluzionarie. Col tempo però, questi locali divennero luoghi di incontri raffinati, e non più solo di artisti maledetti o rivoluzionari che si riunivano di nascosto, e si trasformarono in poli di attrazione e di incontro del “bel mondo” parigino. Potremmo paragonare i bistrot di quei tempi ai nostri caffè letterari dei primi del 900, perfettamente interpretati da Guttuso nel 1976 con la tela “Caffè Greco”, dove il bar di Piazza di Spagna viene ritratto con all'interno tutti i personaggi dell'arte e della cultura che lo avevano frequentato durante gli anni. Oggi, i bistrot, possono essere paragonati a piccoli ristoranti, dall'atmosfera informale, dove poter assaporare piatti tipici a prezzi un po' più bassi di quelli dei ristoranti veri e propri, con la differenza che nei bistrot ci si può accomodare semplicemente per bere un drink o un caffè. In pratica stiamo parlando di una raffinata evoluzione dell'osteria, dove molto spazio hanno anche le pietanze: di solito la scelta è limitata rispetto ai ristoranti, ma il cibo è ottimo.
