Stamattina, stanca di pioggia, ho preso la mia 30D a tracolla e via per le vie del centro storico. Le mie altre reflex, mi hanno guardata un po' in cagneso dall'armadio dell'attrezzatura fotografica: ma io ho deciso di farle girare un po' tutte e quattro. Oggi tocca alla più vecchia. Bene, bando alle ciance, in centro, mi viene nostalgia del panzerotto che, ai tempi del liceo, andavo a mangiare in via Santa Redegonda da Luini. Buono come sempre, e super affollato come ai vecchi tempi, l'angusto spazio negozio. Questa è la cronaca, ora un po' di storia. La signora Giuseppina Luini, trasferitasi dalla Puglia con la sua famiglia nel 1949, rileva a Milano il Forno di Via S. Radegonda 16. L'intuizione di far conoscere i panzerotti, tipico prodotto pugliese, a Milano viene proprio da lei. Mentre nei primi anni l'attività si concentrava principalmente sulla produzione di pane, rifornendo i principali ristoranti e alberghi del centro, l'interesse della signora fu sempre rivolto ai prodotti tradizionali della sua terra e, un giorno, trascrivendo le ricette tramandate da suo nonno, trovò quella dei panzerotti. Inizialmente se ne friggevano pochi: i milanesi non conoscevano ancora il gusto di questo prodotto che però, nel giro di pochi anni, consacrarono alimento principe del loro pasto. Oggi, i ragazzi che venivano a mangiare i panzerotti durante la scuola, ci ritornano con affetto portando i loro figli: la tradizione così si trasmette alle nuove generazioni. Per la cronaca, anch'io ci ho portato i miei nipoti da piccoli.
