Io principalmente sto in negozio e seguo la clientela (anche all'ingrosso) insieme alla titolare, ma è capitato che il casaro abbia dovuto assentarsi per un paio di settimane e allora l'ho sostituito (dopo un corso intensivo). Non è difficile, ma bisogna stare attenti a tante piccole cose!
