A7sII messa a fuoco automatica e esposizione completamente automatica: domande

ciao a tutti ho preso un'a7s usata e appena presa riuscivo ad usarla con esposizione completamente manuale, poi vi erano impostazioni dei tasti un po strane e l'ho resettata.
Ho lasciato tutto com'è impostando solo la modalità video su f3 e la ruota su iso, ma nel video non riesco piu ad impostare l'esposizione manuale con messa a fuoco impostata sull'obiettivo su M potrebbe essere un problema causato del fatto che uso 28-75 sal su lae4?

Inoltre volevo sapere se le impostazioni s-log o i profili personalizzati sono attivi anche negli scatti foto raw
