mi succede spesso di fotografare in manuale e di notare che il diaframma con questo obiettivo si blocchi e non arriva fino al minimo di 2.8...mi sapete dare una spiegazione?

Se intendi il Fujifilm XF 18-55 2.8-4.0, arriva a 2.8 praticamente solo a 18mm.
Se hai provato a scattare ad altre lunghezze focali, è normale che l'apertura minima vada verso 4.0
