Il mestiere dell'acquaiolo nelle risaie vercellesi, il “pradarö", è tuttora fondamentale per la coltivazione del riso, perché si occupa della gestione dei canali di irrigazione, regolando il flusso d'acqua per allagare e drenare le risaie, garantendo così le condizioni ottimali per la crescita del riso. E' un lavoro che richiede conoscenza del territorio, delle pendenze e delle dinamiche idriche. L'amico Giuseppe, ritratto in foto, lo fa da quasi quarant'anni sempre con voglia e grande passione. Nei suoi racconti ricorda la fatica del mestiere, le levatacce, gli incontri con la fauna che popola le risaie e l'abbondanza di pesci e anfibi ormai scomparsa (tinche, carpe, anguille, rane), spiegando come essa contribuiva non solo alla coltivazione ma anche alla dieta del mondo agricolo.
