Si tratta di Pecorino, per me il Re dei Formaggi a parimerito col Reggiano, il Bitto e pochi altri, a vari livelli e modalità di stagionatura... foglie, cenere, ecc... ma il migliore almeno per me risulta essere quello "base" del posto, che ha tipicamente la buccia arancione ed è proprio caratteristico.
