However, I always shoot in jpg + raw, to have all the options available. In any case, I'm fine-tuning the cameras to get "in camera" jpg files that make the image as close as possible to what I "see".
From this point of view the camera (among those I use) that proves to be "more flexible" is, in my experience, the Fuji X100F, followed by the Sigma SD quattro in Monochrome mode, while the Sony are slightly more "stubborn".
