Nell'antichità il giallo era un colore apprezzato. Gli antichi greci e romani lo usavano negli affreschi parietali, ricavandolo dall'ocra e gli antichi romani lo indossavano negli indumenti per cerimonie e matrimoni. In Asia e in Sud America il giallo è sempre stato considerato positivamente. In Occidente però a partire dal Medioevo venne associato all'inganno e al tradimento. Venivano distinti l'oro -ritenuto un colore splendente, brillante e luminoso che rappresentava il sole, la luce, il calore e, per estensione, la vita, l'energia, la gioia, la potenza- ed il giallo -considerato più spento, opaco e triste. Nell'iconografia medievale e nei romanzi i personaggi spregevoli si rappresentano in giallo e a partire dal XII secolo Giuda si raffigurò con vesti gialle. Il giallo sia in tintura che in pittura si ricavava perlopiù dai vegetali e dai solfuri (questi ultimi contengono lo zolfo che può talvolta provocare turbe mentali e per questo motivo veniva considerato un colore diabolico) ottenendo tinte resistenti. Da circa la metà del Medioevo per il giallo aumentarono le associazioni negative e perfino usato per indicare gli esclusi e i condannati, come gli ebrei, ciò si mantenne anche con la riforma protestante. A partire dal XIII secolo i concili imposero agli ebrei di portare un simbolo di riconoscimento: perlopiù a forma di stella gialla o rossa che evocava l'Oriente, usanza ripresa poi dai nazisti negli anni '30 del '900 che obbligava gli ebrei a portare una stella gialla che spiccava sugli indumenti. Successivamente la simbologia cominciò a cambiare anche grazie all'elaborazione nel XVIII secolo della teoria dei colori in cui il giallo era un colore primario. In pittura la svalutazione del giallo che durò fino agli impressionisti, si andò perdendo e questo colore cominciò ad acquisire un valore positivo. Ad esempio in Francia il vincitore del Tour de France indossa una maglia gialla. Gradualmente la simbologia del giallo è stata rivalutata ed il forte contrasto che c'era con l'oro si è attenuato.
