A Serrapetrona , nel cuore delle Marche , l'uva Vernaccia nera viene raccolta a mano, quindi posta sui fili per iniziare l'appassimento , cioè la perdita dell'acqua ed il conseguente aumento del tasso zuccherino, che trasformandosi durante la fermentazione in alcol , darà vita ad uno splendido prodotto dell'enologia italiana.
