Grazie anche a voi  @Ollen. ho già recuperato al massimo, purtroppo c'era un forte contrasto per via della luce che filtrava dalle nuvole in maniera irregolare, avrei dovuto sicuramente partire da un file più sottoesposto per recuperare quelle piccole parti di bianco. Grazie per l'apprezzamento e i consigli, sempre graditi !

I have already recovered at most, unfortunately there was a strong contrast because of light filtering through the clouds in an irregular manner, I should certainly from a file more underexposed to recover those small pieces of white. L'unico automatismo che si perde è l'autofocus, ma sulla 7d se si usa il live view si può usare l'autofocus sul sensore. Più lento ma anche più preciso, aiuta molto ed evita di mettere le mani sull'obbiettivo che anche su un buon treppiedi comunque diventa più sensibile alle vibrazioni visto la focale in gioco ( 1600 mm equivalenti ! )
Comunque prova e riprova vedrai che qualcosa esce !

The only automatic that you lose is the autofocus, but the 7D if you use the live view you can use the autofocus on the sensor. Slower but more accurate, it helps a lot and avoid to get your hands on the lens that even on a good tripod, however, becomes more sensitive to vibrations seen in the focal game (1600 mm equivalent!)
However, trial and error you'll see that something comes out! :-D
