Lo stoccafisso all'anconitana è uno dei piatti tipici della cucina anconetana, se non il suo simbolo gastronomico; cavallo di battaglia di ristoranti, trattorie e cucine casalinghe del capoluogo marchigiano, e non solo, che una volta l'anno si sfidano in una gara gastronomica, è amato e venerato da tutti i buongustai del merluzzo norvegese. La sua storia risale a diversi secoli fa, quando intrepidi navigatori anconetani, approdando dall'adriatico sulle lontane coste norvegesi, scoprirono questo meraviglioso pesce e la sua lavorazione per garantirne la conservazione, e ne iniziarono l'importazione dalle isole Lofoten. Attualmente per tutelare la tipicità del piatto, e diffonderne la sua conoscenza in Italia e nel mondo, è stata fondata una "Accademia dello stoccafisso all'anconitana". La ricetta originale prevede preferibilmente l'utilizzo di stoccafisso qualità "Ragno", accompagnato da patate tagliate in pezzi grossi, pomodorini a grappolo e olive nere, una lunga cottura prima in padella e poi in forno, e un riposo di almeno 12 ore prima della consumazione. #Cucina #Food #Cibo #Pesce #Ortaggi #Giallo #Rosso
