La lumaca scelta per l'allevamento è l'Helix Aspersa, detta anche Zigrinata o Maruzza; in Francia è conosciuta come Petit-gris oppure come Chagriné, mentre in Spagna è chiamata Caracolas. E' la chiocciola più diffusa nella fascia mediterranea e in Italia rappresenta l' 80% del patrimonio elicicolo. L'uso dell'Helix Aspersa in ambito alimentare ha portato alla sua introduzione e naturalizzazione in molte parti del mondo. E' stata scelta per la sua resistenza e capacità di adattamento, e soprattutto per la sua crescita precoce; infatti è pronta per essere degustata dopo soli dodici mesi. Un'altra importante caratteristica della suddetta specie è la forte riproduttività (quasi 120 uova all'anno in due covate). Il diametro della sua conchiglia può arrivare ad un massimo di 35 mm con un'altezza di 28–32 mm e con un peso che può superare i 15 gr.

NICE macro of this beautiful snail set on pleasant light background though so it seems to slip on an imaginary path suspended in nothingness. I would try to crop a bit by trimming something above and enough in front (half the space) to compact the photo and bring the snail to the screen (personal opinion of course) ;-).
