Le rocce ( composte da arenarie, calcare e marne : miocene medio, da 16 a 10 milioni di anni fa) sono state scalpellate (metodo di estrazione a blocchi) con grossi scalpelli da abili lavoratori per ottenere della architravi e/o stipiti per le abitazioni già dal 1500. Per assicurare la robustezza delle volte delle cavità, sono state lasciate delle colonne di supporto inclinate (alcune fino a 45°)
