Le Saline della Laguna dello Stagnone, che si estendono nella zona della pre-riserva della Riserva naturale orientata delle isole dello Stagnone, sono costituite da vari ordini di vasche con una propria specifica funzione, collegate da chiuse e canali. Costituiscono uno dei passaggi più originali ed affascinanti della terra siciliana. Le saline possono produrre ogni anno fino a diecimila tonnellate di sale marino integrale. La produzione del sale presso le Saline della Laguna avviene sfruttando gli elementi naturali. Il ciclo di produzione inizia a fine marzo e termina a luglio, quando la crosta raggiunge (in media) gli otto centimetri di spessore. Il Mulino d'Infersa, all'interno delle Saline della Laguna dello Stagnone, risale al XVI secolo. È del tipo a stella (anche detto olandese) ed è tra i più grandi di tutta l'area delle Saline tra Trapani e Marsala. L'altezza complessiva della torre sfiora i tredici metri. Le macine al centro della torre sono di calcarenite locale, assemblate a spicchi e tenute assieme da un cerchio di ferro: ruotano mosse dal vento e macinano il sale. Tra le tante bellezze e attrazioni visitabili alle Saline della Laguna, il Mulino d'Infersa è certamente il protagonista indiscusso, per la sua posizione, per la sua storia e per il fascino dei suoi ingranaggi e degli elementi che lo compongono (perfettamente funzionanti). Si tratta di un vero e proprio gioiello di archeologia industriale, la cui storia è profondamente legata con quella delle saline circostanti. Il suo ruolo principale è infatti, da sempre, quello di sfruttare la forza del vento per attivare le macine destinate alla lavorazione del sale.
