Il lavoriero è la struttura di pali di legno che, finita con barriere costruite in canna di palude, costituiva un passaggio obbligato per le anguille, posto sui percorsi di migrazione che i pesci seguivano per tornare in mare aperto.
Nelle notti di alta marea e mare mosso il sentore di salmastro scatenava nei pesci l'istinto della migrazione verso il Mar dei Sargassi, i lavorieri le costringevano dentro le camere di cattura dove venivano catturate e avviate alla trasformazione: cotte negli spiedi allestiti nei grandi camini delle case dei lavoranti e quindi marinate, in alternativa inviate alla manifattura delle anguille in centro paese.
La casa dei lavoranti era luogo di lavorazione, ma anche residenza dei lavoranti che vi abitavano in condizioni durissime: freddo, umido, igiene assente, alimentazione precaria. Le donne svolgevano il durissimo lavoro di manifattura e cottura del pesce, esposte a fumi e sbalzi di temperature. La sopravvivenza era precaria e l'aspettativa di vita molto breve.
Il sacrificio quotidiano di queste genti contribuì al fasto degli Este, titolari dell'esclusiva della pesca e trasformazione delle anguille in valle e arricchiti da tale attività. La visita all'interno delle case è molto commovente.
Secoli e secoli di prelievo massiccio dell'anguilla a scopo industriale, ne hanno fatto una delle specie a maggior rischio di estinzione.
