BOTTARGA: LA PREPARAZIONE La sacca ovarica, detta gonade, viene estratta dal pesce femmina con delicatezza e lavata per eliminarne le impurità. Poi comincia l'opera e la maestria dell'essere umano: la salatura con sale marino. È necessario rivoltare quotidianamente le sacche e sostituire il sale una volta umido, segue la pressatura e la stagionatura.?Lo scopo è assorbire nel più breve tempo possibile l'acqua presente.
