La festa di san Giorgio è una singolare festa che a Ragusa non si festeggia il 23 aprile, giorno del santo, ma l'ultima domenica di maggio. Caratterizzata dalla processione che si articola per le strade di Ibla, la statua del cavaliere (rappresentato a cavallo, vestito come un antico soldato, armato di una lancia d'argento mentre affronta e uccide un terribile drago) viene portata a spalla dai fedeli e seguita da una folla di devoti. Per la grande occasione la chiesa viene addobbata con stendardi, fiori e luci e la statua del santo cavaliere e dell'arca santa (contenente le reliquie del santo patrono e di altri santi) vengono poste nei due altari laterali della chiesa per la venerazione dei fedeli. L'intera città - vicoli, strade, piazze, si veste di luminarie e di vivaci colori, inoltre le pregevoli porte intagliate della chiesa madre, che nel corso dell'anno rimangono coperte da due imposte, si aprono per la gioia dei fedeli. I festeggiamenti cominciano circa un mese prima, quando le due statue vengono scese, con un antico procedimento, dalle due nicchie laterali poste nelle due navate laterali, poi si attendono con ansia i tre giorni dell'ultima settimana di maggio (venerdi sabato e domenica) a suon di banda e di mortaretti si porta fuori il simulacro di San Giorgio. La statua che fu opera dello scultore palermitano Rosario Bagnasco verso la seconda metà dell'Ottocento è composta prevalentemente di legno di ciliegio, questo materiale infatti è di facile intarsio nella lavorazione con aggiunta di altri materiali ferrosi distribuiti nelle parti, opera di eccellente valore artistico ed espositivo, le forme infatti sono in equilibrio tra di loro, lo sguardo del cavaliere, la posizione della testa del cavallo in perfetta armonia con esso danno a questa statua equestre una sensazione di attraente folklore allegorico, ciò nonostante consente ai portatori di danzare quasi a passo di musica, di farla girare e di alzarla a braccia facendola "abballare" (ballare) come a simulare la cavalcata. La statua del cavaliere è preceduta da un'altra portantina sulla quale è posta la "santa cassa" in argento lavorato con le reliquie dei santi. La statua del santo patrono viene portata in piazza dove si forma la processione che, con il clero in testa, seguito subito dopo dalla statua del santo, dalla "santa cassa", dalla banda musicale e quindi dai fedeli comincia il giro delle caratteristiche vie di Ibla.
