Ogni cinque anni si svolge a Sampeyre, in Val Varaita (Cn) una festa di antichissima tradizione (le origini paiono risalire a prima dell'anno mille!): si tratta del "Baio", una pittoresca e assai sentita festa occitana, tipica di questa zona del cuneese, nata per commemorare la cacciata dal territorio dei predoni saraceni che, appunto agli albori dell'anno mille, provenendo dal mare, risalivano il nord Italia e non esitavano ad addentrarsi nelle vallate alpine per compiervi scorrerie e razzìe. I festeggiamenti, animati da figuranti i cui abiti e caratteristici copricapi sono vivacizzati da coloratissimi nastri e ornamenti, sono aperti dalla banda musicale che precede il variopinto corteo che tocca in successione le borgate adiacenti a Sampeyre.
