Antica ricetta di mamma Pasqualina: Sbucciare le melanzane, tagliarle a fettine sottili, metterle sotto sale per 3-4 ore, spremere l'acqua e togliere i semi, sbollentare le melanzane con 50% di aceto bianco e 50% vino bianco per 5 minuti, scolarle, farle raffreddare distese su un panno o tovaglia, appena raffreddate mettere sotto pressa per togliere l'aceto ed il vino che hanno assorbito, condirle con aglio, sedano, peperoncino, olio d'oliva. A questo punto ci sono due possibilità: 1) servirle a tavola 2) metterle in vasetti per conservarle sott'olio (riempire il vasetto di olio d'oliva mano a mano che si riempie di melanzane). Grazie Stefanob e Franco effettivamente sto lavorando molto per scoprire qualche antica ricetta laziale che valga la pena di condividere cercando di ripercorrere un viaggio gastronomico e culturale all'insegna di "Dimmi cosa mangi e ti dirò chi sei" come recita il celebre adagio di Anthelme Brillat-Savarin. Anche a livello scolastico è celebre il progetto "sapere i sapori" che pone l'accento sulla educazione alimentare e sulla ricerca delle sane tradizioni culinarie laziali e sui cibi semplici e naturali. Devo inserire molti materiali ma sicuramente attiverò una specifica sezione sul mio sito web didattico www.multimediadidattica.it.

Thanks Stefanob Franco and actually I'm working hard to find some ancient Latium recipe worth sharing trying to retrace a gastronomic journey and cultural banner of "Tell me what you eat and I will tell you who you are" as the famous adage Anthelme Brillat -Savarin. Even at school is famous the "know the flavors" which focuses on nutrition education and research of healthy culinary traditions of Lazio and the food simple and natural. Should I put a lot of materials but surely I will open a special section on my website www.multimediadidattica.it teaching.
