Le sarracenie, il cui genere comprende otto specie diffuse nelle paludi del Nord America, sono piante carnivore caratterizzate da una trappola, chiamata ascidio, a forma di imbuto. Sulla sommità dell'ascidio è presente un coperchio, l'opercolo, che impedisce all'acqua di entrare all'interno evitando di diluire i succhi digestivi. Tutta la pianta è cosparsa di ghiandole nettarifere che attraggono gli insetti; questi, una volta raggiunta l'imboccatura della trappola e intontiti da alcune sostanze contenute nel nettare, finiscono col perdere l'equilibrio e cadere all'interno. Una volta dentro, le pareti lisce e la presenza di piccoli peli rivolti verso il basso, impediscono al malcapitato di risalire. Il frenetico movimento delle zampe, nel vano tentativo di fuggire, stimola alcune ghiandole poste all'interno dell'ascidio a produrre gocce di un enzima molto potente che dissolve le parti molli dell'insetto per poi riassorbirle. Inoltre sono presenti anche diversi microrganismi che attaccano la preda decomponendola, favorendone, in questo modo, l'assorbimento, da parte della pianta, delle sostanze nutritive.
