Dunque, premesso che a livello di tecnica fotografica sono uno scarpone e me la cavo meglio più con gli animali che con l'attrezzatura:
a) quelle impostazioni che hai usato dovrebbero andar bene, grosso modo. puoi giocare un po' ad avere tempi più lunghi, dato che sono soggetti fermi, e vedere cosa succede. Puoi anche abbassare gli iso a 200, perchè no?
b) con luce dura o morbida, una volta, si preferiva seguire o comunque cercare la luce giusta, con orari e velature di cielo. hai presente quei ritratti alla luce di mezzogiorno con un cono d'ombra proprio nero dovuto al naso? ecco, per evitare quelle cose… Oggi magari tante cose si aggiustano in pp (dove io non mi addentro molto e tu meno di me, a quanto vedo). La base resta comunque il tipo di luce: ci sono molti articoli in internet, digita " foto luce dura luce morbida" e cose del genere e vedrai…
c) quanto ai settaggi della reflex: usi un ottimo tele, e la 7d come me. ti scrivo i miei settaggi di ieri della 7D:

modalità AV (quindi variavo a 7 a 10 in base alla nuvoletta di passaggio, con iso sempre a 400, il tempo andava in automatico)
comp.esposizione/impostazione AEB : 0
nulla per il flash
selezione manuale singoli punti AF (il centrale)
immagine fedele
luce diurna (e quindi così il bilanciamento del bianco, che segue in automatico); ma può andar bene anche la modalità automatica (AWB)
misurazione spot
ottimizzazione luce: standard
RAW (ovvio)
AF Al Servo
scatto continuo veloce
controlli personalizzati: nulla

Ma non si tratta dei settari della 7D, secondo me. Devi cercare la luce giusta. Riprova in un altro orario (non necessariamente con i gruccioni, se non sono a portata di mano).
