Ci ho provato anche io, però il 200 mm è poco per i dettagli, e croppando si è costretti a usare più sharp del dovuto. Quindi da dove partire, troppo sharp, pochi dettagli... per fare queste foto ci vorrebbe un 300. E forse i dati di scatto possono farvi capire se ho sbagliato qualcosa, forse avrei dovuto aumentare l'F?

stringere di più il diaframma peggiora i dettagli. A livello di dettagli la lente che hai usato rende meglio tra f5.6 e f8. Probabilmente anche a f4 restituisce più dettagli rispetto a f11. Un consiglio è quello di sottoesporla un po' altrimenti si perdono i dettagli sui bianchi tipo le creste dei crateri.
Ovviamente hai ragione dicendo che servono molti mm in più per la luna. Ideale sarebbe avere 600 o 800 mm senza moltiplicatori. Però già tra i 300 e i 500 si hanno buoni risultati.
