Il Ricetto di Candelo è una struttura fortificata sorta per iniziativa e volontà precisa della popolazione candelese allo scopo di conservare e difendere i beni più preziosi della comunità: prodotti della terra, soprattutto vino e granaglie. Viene costruito su un terreno di proprietà di signori locali (Vialardi), a cui inizialmente viene corrisposto un censo di 21 ducati. Più tardi sarà riscattato e diventerà possesso e simbolo della comunità. È sempre stato utilizzato come deposito per i prodotti agricoli in tempo di pace e come rifugio temporaneo per la popolazione in tempo di guerra o pericolo; tranne eccezioni, gli edifici non sono mai stati abitati in pianta stabile. Mancano dati precisi circa la sua fondazione e le notizie storiche pervenute sono tarde; esiste già infatti quando la comunità candelese fa atto di dedizione spontanea ai Savoia nel 1374. Le ipotesi sulla sua origine sono varie, ma tali da farlo risalire ad un periodo compreso tra la fine del XIII secolo e la prima metà del XIV secolo. In Piemonte, l'origine dei ricetti si colloca tra il XII e il XIV secolo, contestualmente alla crescita dell'autonomia comunale; nel Biellese la costituzione dei ricetti si protrae fino al primo decennio del '400. Il termine Ricetto, dal latino "receptum" (ricovero, rifugio), indica essenzialmente un luogo difeso, cinto da fortificazioni. Il vocabolo, derivato dalla terminologia militare romana, nel corso dei secoli subirà varie trasformazioni: receptum - recetum - reccetum - ricetum- rizetum - reductum - rissetto - restretto - recetto- ricetto. Nel Medio Evo assume il significato di raduno in un sito fortificato atto alla difesa tanto della gente quanto dei prodotti del suolo e del bestiame. In antichi documenti candelesi si trova poi il termine "castrum" come sinonimo di ricetto; in una supplica del 1509 al duca di Savoia si parla del "castrum munitissimum", ove ogni uomo del luogo possedeva "domum" (casa), costruito dalla comunità a scopo di ricovero "tempore guerrarum" (in tempo di guerra) Il ricetto di Candelo si è conservato mantenendo la sua struttura originaria grazie alla sua matrice contadina; fino a tempi recentissimi è stato infatti utilizzato per la vinificazione e la protezione dei prodotti della terra e lo è ancora in parte oggi.
