Le Concerie di Fez, o Chouara, con il loro odore pungente, le enormi vasche di pietra piene di pigmento e le pelli stese ad asciugare una dietro l'altra, sono famose in tutto il mondo. Il quartiere delle concerie medievali di Fez è un luogo da non perdere se siete in visita nella più antica delle città imperiali del Marocco. Qui sono impiegati tutt'oggi i processi utilizzati nel XVI secolo, quando Fez si è imposta come leader nella loro produzione, per trattare le pelli di mucca, cammello, pecora e capra. Le concerie sono accessibili ai turisti con una minima quota di ammissione ma potete ammirare lo straordinario spettacolo delle cisterne ad alveolo dai tetti a terrazzo dei numerosi negozi di pelletteria della Medina di Fez. I frenetici lavoratori, con le gambe nude colorate dai pigmenti multicolori, come il giallo curcuma, il blu indaco, il verde menta, puliscono le pelli, le ammorbidiscono, le colorano e infine le stendono ad asciugare. Il periodo migliore per visitare le Concerie è durante la mattina in quanto vi è più attività.
