Il 9 gennaio 2008 sono stati presentati i lavori di restauro del Salone d'Onore di Palazzo Barolo, iniziati nell'autunno 2006. Gli interventi, per i quali la Compagnia di San Paolo ha stanziato un contributo di 550mila euro, hanno riguardato gli elementi decorativi e le superfici interne del Salone. In particolare, sono stati restaurati la volta, decorata con un affresco attribuito a Mattia Bortolini e intitolato "Il trionfo di un eroe", i ritratti appesi alle pareti raffiguranti i membri delle famiglie Druent e Barolo, le quattro porte interne con decorazioni in finto marmo e le grandi tele ovali con soggetti mitologici posizionate sulle sovrapporte. In seguito al recupero, torna al suo pieno splendore una delle più significative espressioni del barocco piemontese a Torino, che ora presenta anche migliori condizioni di fruibilità e di adeguatezza a ospitare manifestazioni culturali e di rappresentanza. Quest'ambiente gode di una acustica straordinaria, da osservare in alto un balconcino (quattro in tutto) da dove si esibivano i musicanti.
