Vi era l'Ufficio di Cucina, che aveva cura della preparazione delle numerose pietanze costituenti i pasti del re e della sua corte. L'Ufficio di Frutteria, Confetteria, Caffè provvedeva, invece, all'acquisto di frutta, diablottini, cioccolato, latte, crema, farina per confezionare torte e dolci di ogni genere, caffè, tè e generi coloniali. L'Ufficio di Someglieria era responsabile della distribuzione di vini e liquori, del loro acquisto e della loro conservazione. L'Ufficio di Credenza e Vassella, infine, si occupava della compera e della distribuzione del pane per le diverse tavole, della preparazione e del servizio della tavola reale, della pulizia e custodia di piatti, posate, vasellame e lingeria.
