Il vitigno Dolcetto rappresenta una sorta di " albero del pane"per i vignaioli che vi si dedicano. Questi, nel corso degli anni, hanno selezionato gli ambienti ideali sulle colline attorno a Dogliani per dare origine ad un vino con caratteristiche tutte particolari e di grande livello qualitativo. Proprio per restare vignaioli e poter continuare a dedicare alla vite le loro attenzioni migliori, i viticoltori di Dogliani, nel 1980, si sono riuniti in una struttura associativa che potesse aiutarli.
