Cari amici, questa foto è dedicata a tutti voi, a quelli che come me amano Roma e al mio amico Enrico Montesano che, anni fa, mi ha spinto a cercare questi posti nella capitale frenetica di oggi. Lui è un vero romano doc, e quando per un po' si allontana dalla sua città, diventa nostalgico, gli manca il suo pesciarolo, il fruttivendolo e la botteguccia sotto casa. Perciò, se incontra il vostro gradimento, la stamperò e non appena lo incontro in qualche teatro a Roma o a Milano, gliene farò omaggio. Chiusa parentesi personale, veniamo alla storia di questa antica salumeria, fondata da Ansuini a fine 1700, nella Roma ancora per certi versi, “papalina”. L' Antica Salumeria Ansuini,m la trovata in Piazza della Rotonda n. 4. Malgrado la prossimità al caos del Pantheon, i prezzi non proprio concorrenziali e il personale alle volte intontito dalle folle, è bene sapere che in questa storica bottega con l'insegna di legno scolpita da Codognotto, l'ottima pizza bianca viene farcita con la porchetta di Ariccia. Ma non finisce qui, l' Antica Salumeria al Pantheon è un ricettacolo di prodotti veraci, genuini e di qualità, molti dei quali di produzione propria. Qui il tempo sembra essersi fermato e regala a tanti turisti ma anche romani veraci antichi sapori e profumi e un'ormai rara maestranza nella lavorazione delle carni suine (e non solo), esclusivamente italiane. Già all'entrata si ammira, penzoloni da grandi uncini nel soffitto o sui banconi, un vasto assortimento gastronomico che spazia dai prosciutti di montagna alla pancetta ai cojon di mulo, dal guanciale alla lonza di Norcia, dalla mortadella ad ogni tipo di salume artigianale. Fra parentesi e per concludere, sempre quando sono a Roma, non manco mai di andare a mangiare un bel “paninazzo” al Pantheon, e dopo, quattro passi e raggiungo il Sant'Eustacchio per bermi il caffè più bono de Roma.
