Ogni volta che vado ad Ostuni, arrivando dalla superstrada che costeggia il mare, la “Città Bianca” mi sorprende. Se ne sta lì, adagiata su i suoi tre colli, e pare che ti aspetti per darti il benvenuto, ti invita ad arrampicarti fra le sue viuzze, riparandoti dalla luce forte del sole che si riflette sulle sue chianche lisce, mentre tutt'intorno ti fanno corona gli ulivi secolari. A Milano, mi tornano i mente i cornetti, riempiti al momento, di crema, che gusto al caffè Garibaldi, a pranzo, il mio panino Imperiale ripieno di polpo grigliato. Scatti su scatti, arrampicate e sudate, granita di caffè che scende giù, quasi fosse nettare degli Dei. Al tramonto, ci raggiunge il grosso della compagnia, e tutti in terrazza panoramica per l'aperitivo, ed infine, dulcis in fundo, la cena al Trullo dell'Angelo. Tutti a tavola, musica, tovaglie a quadretti, e illuminati dalle mille lucine sugli ulivi, ordiniamo i piatti della tradizione: fave e friggitielli, o fave e cicorie, involtini di melanzane, panzerotti fritti, braciole al sugo…e basta così, perché mi sta venendo fame. In serate come queste, qualche volta mi assale un po' di nostalgia e risento il profumo delle foglie di fico, quello delle mandorle tostate, del polpo appena pescato, in quel di Monopoli, e dei ricci, o della bruschetta, fatta come a casa mia, con il genuino e saporito olio degli ulivi delle campagne dei miei nonni.
