E' tradizione che a carnevale mia moglie Maria prepari puntualmento una svagonata di krapfen. Per la precisione sono 197 e qui rappresentata solo una minima parte. Vi assicuro che è una bella impresa prepararli. Spesso si dice: la quantità è a scapito della qualità, ma non in questo caso. I krapfen di Maria vanno difatti a ruba fra parenti e amici e .... fuori dall'uscio c'è la fila che aspetta. ll Krapfen è un dolce nato nel '600 e di origine Austriaca, per la precisione di Graz, il capoluogo della Stiria , meravigliosa cittadina immersa nel verde. Questo fragrante dolce dal ripieno di marmellata di albicocche, è conosciuto anche in Baviera, come "Faschingsk krapfen auf Grazer art", cioè "dolce di Carnevale alla moda di Graz", poiché veniva preparato per le feste di Carnevale, quando i krapfen erano fritti e venduti nelle strade. Da Graz fu presto esportato a Vienna, e poi si diffuse nel Lombardo-Veneto e soprattutto in Trentino, dove nei centri dolomitici si mangiano ancora oggi i migliori krapfen che si possono trovare in Italia.
