Sault è un piccolissimo villaggio provenzale situato su uno sperone roccioso che guarda dall'alto gli immensi campi circostanti dell'area della Vaucluse. Qui tutte le attività locali sono scandite e influenzate dalla fioritura della lavanda e passeggiando per il borgo ci si imbatte di continuo nelle antiche botteghe che oltre a vendere prodotti locali di tutti i tipi, offrono spesso delle dimostrazioni relative alla lavorazione e al confezionamento della lavanda. Insieme a Valensole è considerata una delle mete principali della Provenza, un balcone naturale che si affaccia sui campi di lavanda tutto da godere e il panorama da quassù è una vera meraviglia!
